Cahalot - Mystic Cheese Company
A “Connecticut Style Cheddar” made by our friends at Mystic Cheese Company, Cachalot takes its name from the French term for Sperm Whale, part of cheesemaker Brian Civitello’s homage to Connecticut’s history as a whaling town.
Cachalot takes its style cues from the classic French Cantal, a labor-intensive traditional cheese that often required milking straight in the pasture.
We think Mystic has been on a roll lately, and Cachalot is the latest in their quest to honor classic European hard cheesemaking techniques.
Cachalot is aged a minimum of 4 months. We love its notes of tangy creme-fraiche and fluffy texture.
